Living the low-carb lifestyle has been a wonderful journey for me. Not only do I still get to eat some wonderful food, but trying new recipes is so much fun!
And here is one recipe that is just so yummy you won’t believe it! Mr. G even said this is one of the best low-carb recipes I have ever made. Folks, that was a huge compliment for my cooking skills that day.
It’s easy. It’s spicy. And could be changed up to suit your tastes.
Here’s how to make it:
- 2 low carb tortillas
- 1 pound of cooked ground beef
- Shredded Jalapeno Monterey Jack Cheese
- Shredded Cheddar Cheese
- Taco Seasoning (I make my own)
- Can of Rotel Tomatoes
- Chopped green peppers and onion
- Chopped black olives
Using a 10” skillet, lay your ingredients in this order:
Tortilla
Ground beef
Jalapeno Monterey Jack Cheese
Taco Seasoning
Tortilla
Drained Rotel tomatoes
Cheddar Cheese
Green Peppers
Onions
Olives
Bake at 400 degrees for 30 minutes. Serve with sour cream.
You can also add a bit of queso sauce over the ground beef for a little more flavor.
