And the secret ingredient is soda water 🤫 makes them SO fluffy and pillowy 🤌 and ideally you’d use plain seltzer but I only had blood orange…

Also, I’m thinking I should be starting a gluten free fall series…thoughts??

If you want this stack…

- Whisk together 1/4 cup of milk, 1/2 cup of pumpkin puree, 1 egg, and 1 tbsp of oil until smooth.

- Then, gently whisk in 1/2 cup of seltzer water.

- Add 1 & 1/4 cup of almond flour, 1/2 tbsp of baking powder, 3 tbsp of granulated sugar, 1 tsp of pumpkin pie spice, and a pinch of salt. Gently whisk together.

- Then, heat a frying pan to medium heat with some butter or oil.

- Pour in the batter 1/2 cup at a time and flip once the batter starts to bubble. You’ll want to cook on both sides about 2 minutes.

- Serve with whipped butter (room temperature butter whipped with a whisk!) and maple syrup :)
