The viral gumbo greens are so perfect for the winter weather. Here’s what I did.
I started w/a homemade roux, which is equal parts flour and oil. Then I added my trinity(garlic, BellPepper and onion), chicken broth, fresh collard greens, smoked turkey, cajun andouille sausage, and shrimp. Of note: I boiled my smoked turkey seperately, deboned and use that broth in my gumbo. I seared my sausage seperately and added them about 90 mins before my gumbo was done. I added the shrimp only 30 minutes before the gumbo was done. For seasonings I used, Tony’s, Old Bay, Bay Leaves and Gumbo File.
