These biscuits are gluten free, dairy free and vegan! AAAND delicious! They remind me of the Bo-Berry biscuits from Bojangles (which I miss dearly after going GF). Now you nor I ever have to be without them again 🙌🏻
Dry ingredients:
•2 cups GF 1:1 flour
•3 tbsp cane sugar
•1 tbsp baking powder
•1 tsp salt
Wet ingredients:
•3/4 cup thick vegan coconut vanilla yogurt (I used Siggi’s)
•3/4 cup plant milk
•1 tbsp lemon juice
•1 stick plant butter, shredded (1/2 cup) (freeze before shredding)
•1 cup fresh blueberries
•1/4 cup melted plant butter for brushing
•1/4 cup cane sugar for sprinkling
-Preheat oven to 500°F
-Combine dry ingredients in a large bowl, whisk together
-Combine wet ingredients in a medium bowl, whisk together
-Add wet ingredients and shredded butter to flour mixture
-Mix together until just incorporated, dough will be sticky
-Dump dough onto floured working space
-Sprinkle with more flour and press dough until about 1” thick
-Add blueberries to top of dough and fold edges of dough into the middle, press dough down lightly to incorporate blueberries
-Divide dough into 10 pieces
-Shape into biscuits and add to a greased cast iron skillet
-Bake biscuits for 8 min
-Remove from oven, brush with melted butter and sprinkle with cane sugar
-Bake another 8-10 min until golden
Icing:
•1 1/2 cups powdered sugar
•1 tbsp lemon juice
•2 tbsp almond milk
•lemon zest
-Whisk together and drizzle over top of biscuits fresh out of the oven
