Easiest Mexican street corn in a cup!

Mexican street corn- called elote- is one of our favorites and in a cup it’s called esquites.

It’s super easy to make and I think everyone deserves to enjoy it from a very simple recipe that can be made at home!

This is the easiest and fastest way to make it so you can enjoy it anytime at home! And soooo good ❤️‍🔥

•••Here we used corn, mayo, cotija cheese, cilantro, cayenne powder, salt, a bit of garlic powder, and lime juice and that’s it.

All you need is corn, mayo, cotija cheese, and chili powder.

Usually it is chili piquín but we often use cayenne.

You can also use ancho chili powder.

Or Tajín

You can add lime, cilantro, garlic powder, jalapeños, etc.

For the easiest and fastest way you can use a bag of frozen corn, heat it, add mayo, cotija cheese, and chili powder to taste and/or whatever else you want and that’s it!

It’s also really good if you cook or grill the corn first or roast it and then add the ingredients.
