I also got this recipe from tik tok (Emma) and kinda put a twist on a few ingredients that i used!
what you’ll need:
2 scoops vanilla protein powder ( I used PeScience)
23 grams almond flour
32 grams all purpose flour
52 grams brown sugar (truvia)
40 grams monk fruit sweetener
1 teaspoon baking powder
pinch of salt
dash of pumpkin spice and cinnamon (measure w ur heart)
2 eggs
20 ml sugar free syrup
72 ml fairlife milk
243 grams pumpkin puree
for cream cheese filling:
83 grams 1/3 fat free cream cheese
1-2 tablespoons monk fruit sweetener
preheat oven to 350F
in a mixing bowl go ahead and combine pumpkin puree, milk, sf syrup, 2 eggs, both sugars and mix.
Once fully combined add in your dry ingredients and mix until you get a cake batter consistency.
I used a 1/4 cup measurer to place the batter into the muffin tins. once you fill up your tins, take a small bowl and place your cream cheese and sweetener of choice and mix.
then take the cream cheese mixture and use a small spoon to put a dollop of cream cheese in each muffin tin.
bake in the oven at 350F for about 30-35 mins and let cool and enjoy :)
