These warm, cozy Banana Bread Muffins are perfect for fall 🍂—filled with gooey chocolate chips and the sweetness of ripe bananas!
Ingredients:
• 3 large ripe bananas 🍌 (mashed)
• 6 tbsp melted unsalted butter 🧈
• 1/2 cup granulated sugar
• 1/2 cup brown sugar 🍯
• 1 large egg 🥚 (room temp)
• 1 tsp vanilla extract
• 1 1/2 cups all-purpose flour
• 3/4 tsp baking soda
• 1/2 tsp baking powder
• 1/4 cup sour cream 🥄 (room temp)
• Pinch of salt 🧂
• 3/4 cup semi-sweet chocolate chips 🍫 (+ extra for topping!)
Method:
1. Preheat your oven to 425°F (220°C) 🔥.
2. Mix bananas, butter, sugars, sour cream, egg, and vanilla until smooth 🍯.
3. Sift flour, baking soda, baking powder, and salt together, then combine with wet ingredients. Don’t overmix!
4. Gently fold in those chocolate chips 🍫.
5. Scoop into muffin tins (greased or lined) and top with extra chocolate chips 😍.
6. Bake at 425°F for 5 minutes, then lower to 375°F (190°C) and bake 15 minutes more or until perfectly golden 🧁.
7. Let cool & enjoy!
